I love stuffed bell peppers and decided to try my hand at picking my own ingredients to go inside. They came out great and are perfect for this Fall weather. Plus, they are great meal prep items, low in calorie, and healthy! Say what? Here is my recipe below:
1 pound Jennie-O turkey meat
4 Bell Peppers (cored)
1 package of Quinoa and Brown Rice Mix (I get mine from Sam’s) (Substitute brown rice)
1 package of taco skillet sauce (substitute any sauce you like)
2 TBS dried basil
Salt and pepper to taste
First, core and seed your bell peppers. I loved the colorful bell peppers; they were perfect Fall colors.
Then, on medium heat, brown your turkey meat. Add your salt, pepper, and dried basil to the meat while it is cooking. Warm up the brown rice and quinoa mix in the microwave, then add to your browned turkey meat. Then stir in your taco skillet sauce.
Then, stuff your bell peppers to the rim! I like to add cheese on top of mine, but you don’t have to. I like to bake my peppers for 45 minutes, or until the bell pepper is tender.
After it is finished cooking, take it out of the oven and let it cool for 5 – 10 minutes.
Voila! You now have stuffed bell peppers! I paired mine with a refreshing Kale salad. Enjoy!
